I'm planning to make a pasta salad to bring to a BBQ on the weekend. I've made it once before and followed the recipe exactly. But this time, I'm thinking of replacing the roasted red pepper with fresh diced green & red peppers. Do you think fresh raw peppers would work in a pasta salad, or would the peppers be too crunchy with the pasta?? There's also going to be artichoke, gouda cheese, and chorizo in the salad, and a tangy vinegar/mustard/herb dressing.

I often use this dressing.
cucumber dressing:
1 english cucumber
3/4 cup sour cream
1/4 cup mayonnaise
2 Tbsp. fresh dill, chopped (optional if using cilantro/parsley to replace it)
1 Tbsp. white vinegar
2 Tbsp. green onions, chopped
salt and pepper to taste
Grate cucumber, place in sieve and let drain at room temperature for at least 1/2 hour.
Combine sour cream, mayonnaise, vinegar, dill, green onion, salt and pepper in small bowl. Add the grated cucumber.
The salad itself varies but usually grated carrots, red/green peppers, celery, cilantro or flat parsley, black sliced olives and pasta of course.
The salad is made, mostly :) I need to bring it to a BBQ tomorrow, but I'll be at another BBQ tonight, so no time to make it today and no time to make it tomorrow either. Although I'm going to toss in the wet stuff, like the tomatoes and dressing closer to serving time. It seemed to be holding up well this morning when I snuck some out of the bowl for my lunch. Even without the dressing, it tastes pretty good :)

I usually make pasta salad with raw peppers and such. I love the crunch too and just about any raw veggie works well in pasta salad so just go for it.
Either way works. The taste will be somewhat different if roasted is exchanged for fresh.

Smoodg, I make pasta salad quite a bit..and the one thing I nearly ALWAYS use are diced red and green peppers. Never roasted..always raw. I like the crunch they give to the salad.
