A friend gave me this very simple and extremely tasty recipe.

marinade:

1 cup white vinegar
1 cup brown sugar
1/3 cup Heinz ketchup
(chopped garlic to taste)

Heat vinegar and sugar on low until sugar dissolves, add 1/3 cup of ketchup and garlice and give it all a good stir.

Place tenderloin in a casserole dish ( with lid) and pour marinade over top. Bake at 350 degrees until centre temp reaches 160 degrees, it usually only takes 45 minutes to 1 hour.

Mmmmmmmmmmm. It's sweet and sour pork and it's wonderful served with some white rice.

1 Cup Gold Tequilla
1/4 cup Kosher salt
Juice from 3 Limes
Zest from 1 Lemon
4 Tablespoons Chili Powder

because of the high salt this is more of a brine, so no more than 4 hours depending on the size of you loins.

The recipe is too long so I will give you a great site for recipes. I found it because I was looking for recipe for pork tenderloin. The 2nd time I made it I use the same recipe but substituted a larger, cheaper cut of pork. I marinated it overnight & cooked covered at a slow temp for a long time.

6 cloves garlic

6 tbsp dried oregano
2 lbs pork tenderloin

In a large ziplock bag combine lime juice, oil , garlic, salt and oregano. Add tenderloins and marinade for 2-5 hours. Preheat grill to medium heat. Brush grate with oil. Cok meat for 15-25 minutes turning once.
