That sounds delicious Pearl_girl!
I have made this dish often for a pot luck supper and it always went over well. You can cook it the day before, transfer it to a casserole for the frig. and then reheat it.
4- peeled and cubed sweet potatoes
2 fennel bulbs sliced 1" wide
2- leeks slice in 2" long pieces
6- shallots cut in 1/2
carrots in 1" pieces
2 sweet red peppers cut in chunks
Portobello mushroom cut in 1/2
Put all this in a plastic bag and add 1/2 cup olive oil, crushed garlic, salt and 2 Tbsp Balsamic vinegar and mix well.
On a large baking sheet bake at 400* until tender.
When ready to serve sprinkle a little more Balsamic over the veggies and fresh chopped parsley (optional)
This recipe can be altered to serve more or less people. this serves 10-12. :)
