Pot Roast

i decided to make a pot roast for dinner tonite and i'm making it the way my grandmother used to make it when she stayed with me so i thought i would share her recipe with you...she used to make is completely on the stove...reason being that back in the day she did not have an oven...it's really simple and delicious...but you need to be able to spend a couple of hours with it...

beef or pork roast of your preference (any kind of cut can be used)
4 tbsps of olive oil
1 tsp of finely minced garlic
1/2 a medium onion finely chopped
1 tsp of sweet or hot pimento paste
1 tbsp of good quality paprika
2 tbsps of salt (seems like alot but it's not)
2 cups of water

on medium to high heat in a dutch oven add olive oil, garlic, onion, paprika and pimento paste and salt.
once it starts to bubble an cook add the roast and pour water over top.
turn roast around in broth.
and turn heat down to a simmer
let it cook for 2-3 hours
as the water starts to evaporate add more but no more than 1/2 to 1 cup at a time and taste broth add more salt if you think it's needed.
and turn roast every 1/2 hour
once the roast is cooked remove it from the pot and brown in 2 tbsps of olive oil.
strain liquid through a fine sieve(??sp)
reserve liquid and discard anything left in sieve
in a small pot boil the broth that you strained until it starts to thicken
slice roast and place slices on a platter and drizzle the reduced sauce over top

serves really well with white rice (pour beef sauce over rice) or with good old french fries

no turning on the oven strictly on the stove

who would've thought game meat could be sooo complicated...lol

Yeh deer meat is often much stronger tasting DH claims that is because they run alot more and the blood flow is much greater. It also is what they eat Moose eat water plants and graze in ponds this one was living in a clover field so it has a very mild taste. We have had venison that not even the dogs would eat then we have had some great meat.You also want to get it early before mating season as the meat gets stinky then.

i've had venicen (??sp)...but i didn't like the after taste

It is the best and bison is very good also. You can't buy Moose meat you have to be lucky enough to get one hunting. I did do a roast in the slow cooker yesterday and it is fabulous.

i'm sure moose, bison and elk are wonderful...but i think....ummmm...i'll stick to plain 'ol cow thanks...lol

oh I see your other post about the 300lbs of moose in the freezer. Guess I will have to stick to bison and elk!

Moose meat?! Where did you get this? I need some to cook up for my parents! Haven't seen a moose yet, but I bet they taste good. Nothing like a moose stew when visiting Canada, eh?

just so you know...i started cooking the roast at 10:30 this morning and left it to cook on the lowest setting...and at 1:30 pm i shut the stove off...the roast is so tender it's falling apart...perfection...cooking it slowly and with the broth helps make a tender roast no matter the cut...

you should be able to find it in the grocery store...look in the ethnic section...it's basically hot red peppers that are ground up into a paste then left to ferment...if you can't find pimento paste...either a portugese or spanish version...you could also use red pepper flakes and add as much as you like...depending on the degree of heat you want...

I am going to give this a try with my Moose Meat. I sounds yummy and different to any pot roast I have ever done. Thanks JenJen :) ?Where will I find Pimento paste?

dutch oven pot...you know the biggest pot you get in your set...with the lid and the 2 handles on the side...one of these...black coated?...do you mean teflon?...if so then yup...you can use teflon even cast iron if you have it

yum, yum! Thanks for sharing jenjen. I shall be trying this.
My only question is what is a dutch oven? Is it a pressure cooker, don't think so...I'll have to go shopping looks like...Can I use a black coated pot with a lid?
