I make wontons (similar to potstickers), and I always freeze them.
After I assemble the wontons, I put them uncooked onto cookie sheets, and then put them into the freezer. Once they're frozen, I remove them from the cookie sheets and put them into Ziploc bags.
I have no idea if they have a defined freezer life, but mine keep for months in the freezer.
