DH makes the best Potato Salad at least we love it but this year he has made it twice and after it sits for a few hours ( inthe fridge of course ) it goes all watery and soggy. The potatoes are still firm but everything else is sitting a pool of mayo laced water and it is gross. last night after work I went have have some and I had to drain the liquid out of the bowl and it wasn't nice and creamy it was so watered down it wasn't nice to eat at all. He isn't doing anything different than any other year hasn't changed the type of dressing or potato but something is wrong any suggestions on why. DIL wondered if it was a different temperature in this fridge as that is the only thing that isn't the same.

I asked the chef at work today about the salad and she said it is the type of potato at this time of the year. She said the harder the potato the more water they have and they don't make good salad to use only new potatoes.
My guess would be it was the new potatoes.......my son -in -law is Italian and his mother makes homemade gnocchi(yummy) she said you have to use old potatoes as the new ones are light and airy causing the ghocchi to break down ...if you want the heavy richness you need old potatoes ... I believe the water content is higher in new potatoes . :) ...I love new boiled potatoes with the skin on, with butter salt & pepper. :)
The first time this year he made it he didn't drain the potatoes right away so we thought it was that so this time we were very careful to not over cook them and drain them in a colander right away. He always peels the potatoes first and uses just a regular cooking onion in it. He had some new potatoes and some regular potatoes in it but they were still firm and held their shape but were just a nice texture for salad. He adds egg and onion celery radish and miracle whip.
Maybe some difference in prep? I've heard small cuts of potato absorb more water than large cuts, maybe he cut the pieces smaller this time for cooking and the extra water leached out after? Maybe the type of potato is the same but the ones you buy this time of year aren't as fresh as when you can get locally grown? Maybe he cooked the potato with skins before but not this time?
Just a few thoughts......Did he drain the potatoes really good and let them completely cool?Was the salad dressing low fat instead of regular?
Could it be a different kind of onion?
Would you share dh's recipe with us? I'm willing to test it. :cool:
