I make a wonderful red pepper jelly and often give it to friends. As someone else said, it's nice with cream cheese and crackers. You could also heat it up and use it as a dip for spring rolls, etc. I also love it with peanut butter on a breakfast pita. Delicious!
I just bought the PC red pepper jelly as my mother has been raving about it (for crackers, etc.). The label says that it is good with poultry...are there any good meal recipes that call for it?

This is an excellent recipe. It tastes fantastic over cream cheese with crackers as an easy appetizer, as well as a condiment with salmon. It also makes wonderful hostess gifts.
Red Pepper Jelly
1 1/2 cups red peppers, seeded, quartered, liquidified in the food processor or blender
**1 tsp. ground hot red pepper flakes **
4 cups sugar
1 1/2 cups white wine vinegar
2 envelopes (6 oz. - 170 ml) liquid pectin
Place pepper mixtures, sugar, red pepper flakes and white wine vinegar in a sauce pan. Bring liquid to a boil. Boil for 2 minutes. Add pectin. Boil hard for 1 minute, stirring constantly. Pour hot mixture into sterilized jars. Seal immediately.
** You can decrease or increase the amount of ground pepper flakes according to your taste.

....if you have a Loblaws near you, the President's Choice red pepper jelly is delicious. I've tried a few different kinds (including gourmet ones), but I think the PC pepper jelly is the best :-) Try it on rice crackers with some cream cheese -- yum!! :-P
That's my husband's favourite. Every few weeks, we drive 2 hours to a little community called Wolfville just to visit a little roadside Garden/art gallery/oil,vinegar,jelly store called Tangled Gardens.
