Does anyone have a recipe for Red Velvet Cake? It is a very popular cake made in the south (USA). I hear it is to die for and I want to try it.

It turned out great! I compared different recipes of this cake and made a triple layer one. It is a very beautiful looking cake ...everyone raved!

ps. however, very tedious to make......need lots of time and patience

Just realized you have to be a subscriber to access Southern Living's website. I'll pass on the recipe for Red Velvet Cake. There were several variations including one for Christmas where you add a little peppermint extract to the batter and then top the cake with crushed bits of candy cane.

1/2 c butter or margarine
1 1/2 c sugar
1 tsp. vanilla extract
1 tblsp. white vinegar
3 lg. eggs
1 small bottle red food colouring
2 1/2 c all purpose flour
2 tblsp cocoa
1 tsp. baking soda
1/2 tsp. salt
1 cup buttermilk
Beat batter at med. speed with electric mixer until fluffy, gradually add sugar, vanilla and vinegar, beating well. Add eggs, one at a time, beating until blended after each addition. Add food colouring, beating until combined. Combine flour and next 3 ingredients, add to butter mixture alternately with buttermilk, beginning and ending with flour mixture. Beat at low speed until blended after each addition. Pour into 2 greased and floured 9 inch cakepans. Bake at 350 degrees for 20 to 22 min. or until wooden pick inserted in center comes out clean. Cool in pans on wire racks 5 minutes; remove from pans and cool on wire racks. Spread Cream Cheese Frosing between layers and on tops and sides of cake.

Cream Cheese Frosting
1 8 oz. package cream cheese, softened
1/2 c butter or margarine, softened
1 16 oz. pkg. icing sugar
1 1/2 tsp. vanilla extract ( also Peppermint Extract if desired)
1 cup chopped pecans (or crushed candy canes)

Beat cream cheese and butter until creamy; gradually add sugar and extracts, beating well; stir in pecans or crushed candy canes.

This is a wonderful cake; I first saw it many years ago when a girlfriend baked it for her husband's birthday. Then all the uproar started about red food colouring - not sure where that stands now.

I quite making it back then but may give it another whirl. It is truly a unique colour and a real conversation piece.

Another wonderful publication for recipes such as this is Southern Lady. It is available in Canada but, I admit, not readily found on the news stands.

Good luck with the cake; you will love it.

Not sure about this because I have never tried it, but a short-cut may be to put the red colouring into your favourite chocolate cake mix!!

I haven't tried that particular cake yet - was going to last Christmas but came down with Shingles. I have made a pecan/caramel cake and baked the leaf shaped pastry which adorned the top - a gorgeous Fall cake or for anytime. I also made their citrus cake with orange-flavoured filling. Many of their cakes are three layers and look so gorgeous. There is another one they call Lane Cake which I might try this year too. Good luck and good baking.

I have purchased about five Southern Living Christmas books in the past - which included the recipe for Red Velvet Cake. Subsequently, I subscribed to Southern Living Magazine which I absolutely love. The recipes are fabulous and the decorating ideas are great - also great ideas for vacations in the South. You can sign up at Southern Living's website and get access to thousands of recipes. They're well set up; you can even print copies. Check out the Christmas recipes and also the dessert recipes...they are to die for. I made several of their cake recipes and got rave reviews. 2 tablespoons unsweetened cocoa powder
2 ounces red food coloring
1 cup buttermilk
1 teaspoon salt
1 teaspoon vanilla extract
1/2 cup shortening
1 1/2 cups white sugar
2 eggs
2 1/2 cups all-purpose flour, sifted
1 1/2 teaspoons baking soda
1 teaspoon white vinegar

1 cup milk
5 tablespoons all-purpose flour
1 cup white sugar
1 cup butter
1 teaspoon vanilla extract

DIRECTIONS:
Grease two 9 inch round pans. Preheat oven to 350 degrees F (175 degrees C). Make a paste of cocoa and food coloring. Set aside.
Combine the buttermilk, salt and 1 teaspoon vanilla. Set aside. In a large bowl, cream together the shortening and 1 1/2 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in the cocoa mixture. Beat in the buttermilk mixture alternately with the flour, mixing just until incorporated. Stir together baking soda and vinegar, then gently fold into the cake batter.
Pour batter into prepared pans. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely before frosting. Refrigerate until ready to serve.
To Make Icing: In a saucepan, combine the milk and 5 tablespoons flour. Cook over low heat, stirring constantly, until mixture thickens. Set aside to cool completely. Cream together butter, 1 cup sugar and 1 teaspoon vanilla until light and fluffy, then stir in the cooled milk and flour mixture, beating until icing reaches spreading consistency.
