Salad Dressings

Since some of us are into the healthy/excersice lose weight mode. I thought maybe we could post some favourite salads that we make. I do not buy salad dressings for salads I buy them for marinating meat , i usually make my own dressing. Here is the most favorite of all, everyone thinks i should bottle it,

1/3 cup olive Oil
2 tbsp Red Wine Vinegar
1 crushed Garlic Clove
1 Tbsp dry mustard
pinch of Splenda (cannot be sugar)
salt/pepper to taste

I use this on a mesclin salad with shaved Parmesan on top.

My favourite is a Dijon Mustard dressing:

1 tsp. Dijon mustard
Dried or fresh Tarragon
1 clove of finely chopped garlic
1 - 2 tbsp. Champagne or white wine vinegar
1/4 cup Cannola or olive oil
freshly ground Pepper to taste

Whisk all of the ingredients together except the oil. Add the oil a little at a time & dressing becomes thick & creamy. Taste before putting on the salad to adjust the vinegar & oil if needed. ** The mustard is already slightly salty so extra salt is not needed.**

I have tried it with Sugar and it doesn't taste or blend the same, I use Splenda anyway, I am sure it could be any sugar substitute but the recipe does call for Splenda.

I make the same one as Poorgirl,except I use PC.balsamic & fig vinegar.instead of red wine vinegar. :)

my fav is ....
3tbsp lemon juice
3tbsp soya sauce
2tsp of twin liquid sugar
1tsp of grated ginger

My favourite homemade salad dressing:

1/4 cup olive oil
1/4 cup red wine vinegar
1/4 cup sugar
1/8 tsp. paprika

This is awesome on a strawberry spinach salad. I make it with strawberries, vidalia onion, cucumber, chopped cashews, and goat cheese. If I don't have spinach, I use whatever lettuce is in the fridge -- usually either romaine or mesclun.
