another easy one:) steam green beans, until tender but not too soft. You can do this ahead.
then in a sauce pan melt 1/4 cup of butter, saute about 1/3 cup slivered almonds until golden. Stir in 2 tbsp. lemon juice & 1 tsp grated orange rind ( make sure you avoid the white of the pith it will be bitter). Salt & pepper to taste.
Then pour over your beans & serve.
serves 4. You can also do this with 1lb. of broccoli florets if you like. Enjoy!

here are some suggestions...let me know if any interest you:

green beans almandine

artichokes simmered in olive oil, garlic & oregano

potatoes

asparagus

roasted red peppers

my fav. is grilled mixed veggies (either on the bbq or on my george foreman grill) then I drizzle them with oilve oil crushed garlic, salt pepper, fresh basil, and a little balsamic. This can be prepared early in the day, seasoned & layered on a platter. I cover it well & serve it either at room temp, or you can warm it up while the fish is cooking. If you plan to reheat wait with the balsamic till serving time.
and of course any side of rice is always popular.

Hi Fendi,
I will often place mine in parchment paper & cook it in the oven.
I use 2 sheets of parchment per piece, place the salmon in the center, a bay leaf under it, & season with a few shavings of butter, (or to taste). Salt, pepper & some pesto. Fold the parchment so it is sealed. And bake in 350degree oven till cooked. Great for dinner parties because you can prep. the parcels ahead & just throw the tray in when ready. You can either serve it as a parcel or remove from the paper when ready to serve. Keeps the house from smelling this way too.:)

Fendi,

I love grilled salmon so I season salmon (steaks or fillets) with blackening fish spice, a little bit of olive oil, lemon slices , fresh cracked black pepper , thyme and crushed garlic gloves. I grill the salmon, or quickly fry on high heat in a fry pan 2 min per side and finish in a 300F oven.
