Molten Choc Cakes.
1/3 c unsalted butter
6 ounces bittersweet choc.
3 egg whites, beaten stiff
6 eggs yolks
1/2 c brown sugar
1/3 c flour
425 degrees 5 - 7 minutes.
Muffin tin greased/
melt butter + choc.
in a bowl mix egg yolks + sugar until fluffy, add vanilla.
add choc. mixture to egg yolks, beat on med-hi for 2-3 min.
fold in flour into choc. mixture.\
Do NOT over mix. fold egg whites in just until blended.
Spoon into muffin tin....this makes 6 small cakes. The centre must be a liquid choc. Loosen from tins.
