Tangerine Shortbread
3/4 cup unsalted butter @ room temp.
1 cup icing sugar, sifted
zest of 2 tangerines ( I use 1 orange)
1 tbsp. vanilla
1 3/4 cups flour 2 tbsp. cornstarch
1/4 tsp. salt
Glaze:
2 tbsp.tangerine juice(or orange)
6 tbsp. icing sugar
1 tbsp. unsalted butter, melted
Cream butter & icing sugar until smooth, stir in zest,juice & vanilla.
In a seperate bowl sift flour, cornstarch,& salt. Stir into butter mixture & shape into logs, wrap & chill for about 1 hour.
Oven preheated to 325F.
Slice into 1/4 in slices & bake for 12-15 mins.
when cool glaze if you wish.
whisk together glaze ingredients I prefer to drizzle lightly, since I prefer to taste the shortbread, but you can use as much glaze as you like.

Shortbread
3/4 c sugar
2 c flour
3/4 c rice flour
1/4 tsp salt
1 1/2 c butter (soft)
combine all (I use my bread maker on pastry only until its all well mixed)
put in fridge for 30 min.
roll out
cut cookies
bake at 350 just before edges turn brown (about 9 min.)
Thanks. That's similar to my recipe. I made my cookies on the weekend, and they're so good. I would still love to try other recipes so if you find anymore, feel free to send them along :-)
Here's the recipe -- not sure if it's really shortbread, but these cookies are delicious!!
MELTING MOMENTS
1 lb. butter
Few drops vanilla
3 cups all purpose flour
1 cup icing sugar
1/2 cup cornstarch
Cream butter with electric beater. Add vanilla and dry ingredients and beat until light & fluffy.
Drop by teaspoon onto ungreased cookie sheets.
Bake at 325 degrees for 15 minutes.
Makes 5 dozen.
OK, that was weird -- I finished typing a reply, and then it disappeared....
Anyway, my mom had an awesome recipe for shortbread cookies. If I can find it, I'll post it here for you. From what I can remember, it's a very healthy combination of butter, powdered sugar, and vanilla --deadly, but delicious!!
Oh great, now I've got a craving for cookies....!! ;-)
