Hi Foxxy ... there was a squash recipe in this month's Food & Drink Mag from the LCBO..... take a look if you have a minute.
I have made the most unbelievable squash lasagna - originally from gourmet or bon appetit mag - recipe is very long so if you cannot find it please let me know and I will post it. It does take a while to make but it is fantastic and I get many requests for it in the Winter. I usually follow the recipe exactly. Look under epicurious.com and type in "butternut squash and hazelnut lasagna" and hopefully you will find it.

Yes I do that as well and love it. I was looking for a casserole type dish recipe, maybe with other veggies.
I like to bake acorn squash (cut into 1/4's) with a little brown sugar, nutmeg, butter and salt and pepper. You can use as little or as much seasoning as you prefer.
