I know this probably sounds strange. But does anyone know the secret to keeping ice cream in the cartons from going icy on top after opening them? I know there are bigger things in life to worry about, but it is just one of my pet peeves of opening it one night and then a couple of nights later it is covered with a layer of ice on top. As much as you scrap it off it still tastes different afterwards.

used saran wrap, too and it works. This is a huge problem with homemade ice cream.

I can't remember where I saw this but I do it and it seems to work.
After you use the ice cream cover the top with a piece of wax paper that fits snuggly over the tope of the remaining ice cream making sure that the edges come up slightly up the walls of the carton then make sure you store it in the coldest part of your freezer.

do you have an relatively empty freezer? freezers need to be full in order to be cold enough. fridge's on the other hand will be too warm if they are over full. maybe this could be your problem? our freezers packed and we don't have that problem with the ice cream.
I know from both rest. and grocery store work ice cream is the hardest to keep frozen. You should only keep it in a deep freeze not the freezer in your fridge. The fridge freezer doesn't usually get cold enough to keep it really frozen. The ice is forming from the water thawing in the ice cream and then it can start to spoil.
when it comes to ice cream. maybe your temp in your freezer is wacky. it sounds like somehow the icecream is thawing and freezing again. sacrilige!
