Ingredients:
2T olive oil
8 chicken drumbsticks
1/2 t black pepper
1t salt
2t sweet paprika
2T tomato paste
1/2 cup cooked chick peas
4 cups water
2 medium onions, quartered
2 carrots, quartered
1 zucchini, quartered
2 sweet green peppers, quartered
can add turnip, cabbage if u like
Instant couscous ( I prefer the Zinda brand)
1. Heat oil in a pan and stir-fry the chicken over moderate heat for 2 minutes. Add the pepper, salt, paprika, tomato paste and chick peas and water. Bring to a boil and cook, covered, for 20 minutes.
2. Add the veggies and cook over low heat for 25 minutes
3. Prep the couscous according to package directions.
Then strain the sauce and pour over the couscous, a little at a time so that the grains absorb the sauce. To serve, place the couscous on a platter and arrange the veggies and chicken pieces on top OR you can serve in individual dishes to your guests.
