make your own vinegar, just put a handful of tarragon in a glass bottle and fill with white vinegar, the 5% kind that you buy in the grocery store. Cover and shake now and then. Taste in a week or so. IF you are in a hurry blanche the tarragon first. This can be down with any herb or fruit. Raspberry is so good, just do the same thing, I make mine when the berries are ripe and leave it till Nov. strain it several times thru' cheesecloth and bottle it. I cork mine, dip the tops in hot wax 1/2 parrafin and 1/2 bees wax.and it will keep forever, makes a nice gift.
