My mother used to make this and I can remember her shaking the mixture of vinegar, oil, sugar ???? in a glass jar and pouring it over the bean salad with sliced red onion. Does anyone have this receipe?
I actually think she made it with whatever she had, but it looked and tasted great.

Just a thank you. Had the family get together (three bean salads) LOL and my brother declared that they all tasted like Mom's. A family favourite brought back.

1/2 cup sugar ( i cut this back when i make it)
1/2 cup vinegar
1/4 cup veg oil (i use olive)
3/4 tsp salt
3/4 tsp pepper
shake it well till all the sugar disolves.

This recipe is from the Erie Beach Hotel in Southern Ontario.
BEAN SALAD
• 2 (20 oz) cans green beans (drained) (or 14 oz,)
• 2 (20 oz) can yellow beans (drained) (or 14 oz,)
• 1 (20-oz) tin chic peas (drained)
• 1 (15 oz) can kidney beans (washed)
• 2 med. sized onions (rings)
• 1 large green pepper cut into strips
• 1 Cup Cauliflower, diced (cooked el dente)
• 1-cup baby carrots (cooked el dente)
Put in a jar and shake well:
• 1 c white sugar
• 1 c white vinegar
• 1/2 c salad oil
• 1 1/2 t salt
• 1 1/2 t pepper
Shake well and pour over salad. Put in tightly covered bowl and leave in fridge for 24 hrs. Turn bowl upside down every so often so dressing will soak into all vegetables.
Sorry, but it seems my brother and I remember two different salads but apparently they have almost the same dressing. I remember green beans, yellow beans, red onion and he remembers kidney beans, chick peas, etc. We both remember having it in the summer time, cold and especially when there was company. However, it had to be two separate salads at different times.
"Thank you Windsor" maybe it was one salad. I was typing while you were posting your receipe. Having it this weekend.

And an assortment of various beans??????????????
