Hi everyone!
I have recently been to a dinner party where the host served cooked sliced tomatos on grilled bagette slices topped with ricota... Looks easy enough to make except that I don't know how to cook the tomatos, what kind of tomatoes to use, which spices... She said she cooked the tomatos for almost three hours and I'm not sure if she sliced them first? does anyone have a recipe which seems similar to this one? If so, I'd love to have a copy!! Thanks!

Sara's Roasted Plum Tomatoes
Makes enough to serve 8
Use roasted plum tomatoes to make Sara Foster’s Breakfast Burritos.
8 plum tomatoes, quartered
1/4 cup balsamic vinegar
1 tablespoon extra-virgin olive oil
Coarse salt and freshly ground pepper to taste
1. Preheat oven to 400°. In a medium bowl, combine tomatoes, vinegar, olive oil, salt, and pepper; toss to coat tomatoes.
2. Spread mixture on a rimmed baking sheet, and transfer to oven. Bake until skins shrivel and tomatoes turn slightly brown, about 30 minutes. Remove pan from oven, and set aside.
