the meat recipe is at home, so i will have to type it up. it has many, many types of meat in it. i also have a vegetarian one that is really good, but more complicated to make. i will try to type them up tonight.

i am not italian, but i am happy with my sauces.
the key is good ingredients and fresh spices. i do use canned whole tomatoes most of the time. i buy italian tomatoes - that is tomatoes canned in italy, not italian style tomatoes. i check the ingredients list. if there is citric acid listed i will look for a different brand. when citric acid is used, it means the tomatoes were canned before they were fully ripe. usually i go with san marco brand, but it depends what the store carries.
for general sauce i use tomatoes, olive oil, garlic, fresh basil and kosher salt. i will often saute onion, shredded carrot (for sweetness) and some bell pepper. then add garlic, then tomatoes and simmer on low for about 15 minutes - the length of time it takes to boil the pasta.
i also only use italian pasta, that must only contain semolina flour and water.
i often add wine to my sauce as well.
i have a few different recipes. i learned my sauces and pasta cooking from a professional italian chef at some italian cooking classes.
i also have meat recipes, but don't make them (i'm a vegetarian).
another favourite recipe is canned whole tomatoes, artichoke hearts, sauteed onions and fresh oregano. i like it served on bow tie style pasta with goat or feta cheese on top.
i have to say i am terrible at giving people recipes because i always go by site, smell and taste when cooking. i rarely measure :)
ps. when i don't have time to cook, i buy premade sauce. the one i buy is from italy, in a tall bottle. the ingredients are tomatoes & garlic and i don't think anything else. i can't remember the name off hand but will try to!
