I have been working for the last week or so on our wedding menu, we have decided to hire a personal chef and serving staff for the day so we have complete control over the menu, he will use many of my own recipes for the food and I will have full input on every detail of it. I would love to hear any thoughts on what I have come up with so far. I am still not totally sure about the pasta station yet, I want one for sure, just not sure those are the right pastas.

H'douvres

1. Chicken Sate with spicy peanut sauce
2. Shrimp Sate with spicy red pepper jelly dipping sauce
3. Sushi platter with wasabi and soy dipping sauce
4. Individual shrimp cocktail served in a shooter glass
5. crudités and a selection of dips
6. Humus, baba ganoush and Roasted Red Pepper Dip served with Grilled pita breads and flat bread crackers
7. Antipasto platter – Roasted red peppers, marinated mushrooms, black and green olives, Prosciutto, fresh mozzarella, stuffed hot peppers
8. Spring rolls with sweet dipping sauce

Station 1 – Soup, Bread and Cheese

1. Fresh Summer Vegetable soup
2. A selection of artisan breads with butter, and compound herb butter
3. A selection of cheeses – Extra Old Cheddar, Swiss, camembert, brie, blue cheese, feta and herb cream cheese, marble cheese

Station 2 – Salads

1. Heirloom Tomatoes with fresh basil, parsley, garlic, bocconcini and a white balsamic and olive oil vinaigrette
2. Mixed Greens with mango, red onion, toasted cashews with a lime ginger vinaigrette
3. Classic Creaser Salad with croutons, bacon and fresh Parmesan cheese savings. Served with a creamy dressing, fresh black pepper to taste and lemon wedges
4. Baby Spinach with pears, blue cheese candied almonds and a honey Dijon with thyme vinaigrette

Station 3 - Pasta

1. Cannelloni stuffed with cheese, spinach and diced grilled portabella mushrooms served with a spicy tomato sauce
2. Meet tortellini served with Alfredo sauce

Station 4 – Meet, Vegetables and Starches

1. Prime Rib served Medium with a mushroom ragout
2. Roasted Loin of Pork served with Apple compote
3. Grilled chicken breast served with a balsamic reduction
4. Roasted Garlic Mash potatoes
5. Steamed Green Beans served with herb butter
6. Stuffed Roma Tomatoes – with goats cheese, herbs and topped with breadcrumbs that have lemon zest and herbs

Station 5 – Desert

Chocolate Fountain – with fresh fruit, pound cake and marshmallows for dipping

It looks great. In fact, I would love to eat that in a day but it does seem a bit ambitious even for a personal chef. If it was me I would make some choice selections from each course and hope that the majority of people enjoy what is offered.

From what I remeber from my wedding and the best weddings I have attended is IT IS THE LOVE that is what makes eveyone feel good. My favourite weddings have happened when you see and know that the two people getting married are truely in love.

Make the food memorable but make your wedding even more so.

Just my two cents worth.

Really...

I always remember the food, mostly because most wedding food sucks. Almost everyone I have ever been to the food is horrid, cold, tasteless and boring so I am really trying to avoid that.

Actually as delicious and fun choc fountains are ( i own one) they are messy so I agree with your mom on that one....funny thing about all the weddings I 've attended I can't remember what I ate only how the bride looked and how much fun the reception was so you really don't have to worry about much just let the love flow and dance like there's not tomorrow! :)

Well I have made a few changes, I am taking out the Meet tortellini served with Alfredo sauce and putting in a penne a la vodka instead. Also my mother has strongly urged me not to have a chocolate fountain she is a tad bit worried about it around my dress. So we will be doing a crepe station instead, were you can pick what you want inside of it and what sauces you want on it and the chef will make it for you right there. We have no vegetarians coming to the wedding so I know we are ok there. I had thought about doing a fish dish, but I am not sure how well it will hold on a buffet, plus I really don’t want the hall smelling like fish all night. Maybe I should do smoked salmon with crem fresh on a little potato pancake though..?

WHAT??? no kentucky fried chicken ? no plastic bowls filled up with macaroni salad ??what kind of crazy person are you serving all that spectacular food at your wedding ...why I could whip u up some kraft dinner and weiners in a skillet in no time and save u a pile of money girl!:biglol: :biglol: Best Wishes and Bonappettitttttttteeeee :biglol:

Wow - how many people will be coming? I do agree that a dish such as salmon replace the pork or chicken dish and just have two entrees (since you have a pasta station). If people can't find something to eat in that buffet they must be crazy.

Sounds Yummy. How about a fish (maybe eliminting the pork and adding a salmon) Just an idea. With the pasta I would keep a white and a red sauce. I do not envy what you are going through right now. I was married approx. 2 years ago and it is very time consuming...so many decisions. At the end of the day jsut have fun. All the best to you.

I have looked at the menu a couple of times a and you have some realy nice choices I would like to see at least one dish be it a pasta or meat dish that is a little lighter to me everything seems quite heavy and saucy. I can't imagine eating my way through that buffet I would gain all my winter weight back again. I know it will look amazing just a thought.

Your menu looks great. A lot of variety. The only thing I was thinking is a vegan might have trouble. If you have any coming maybe that's where the pasta dish could accomodate them.

I am still not sure on the pasta station, I might change out the torillini I am not sure that's the best choice I might do something like penne with a vodka cream sauce instead.

OMG, I am drooling! That sounds like an amazing feast! It looks like there are options for everybody, and those appy's and salads sound like they are to die for!
