I have reccently joined Weight Watchers to try and take off the winter pounds. Everyone at the meetings raved about this soup and I have made it twice and DH loves it and it is so simple to make and it is 0 points so you can eat whenever you want.
Garden Vegetable Soup
2/3 cup sliced carrots
1/2 cup diced onion
2 garlic cloves minced
3 cups fat/free broth (beef chicken or veggie)
1 1/2 cups diced green cabbage
1/2 cup green beans
1 Tbsp tomato paste
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp salt
1/2 cup diced zucchini
Spray large saucepan with nonstick cooking spray, heat.
Saute the carrot, onion and garlic over low heat until softened, about 5 minutes
Add broth, cabbage, beans, tomato paste, basil, oregano, and salt; bring to a boil. Reduce heat, simmer covered, about 15 minutes or until beans are tender. Stir in zucchini and heat 3-4 minutes. Serve hot.
I never have zucchini in the house so I added celery with the onion and garlic and I used the whole box of broth and added a little more tomato paste.
Cooks up fast makes the house smell good and is very tasty.

Dh ate the rest of it for breakfast today. It is good but I can't see me eating it for breaskfast but maybe that is why he doesn't have a weight problem.
