We need to replace some wood trims around the wall, but not sure which style or type to get. The walls are pine panels. We could replace with the original style but would have to stain the new pine strips. Not sure what colour to stain, same as paneling or can we do something different? Anso what size trims are best for ceiling ans floor.? Pictures show the original and then some samples.

This is what I would do but remember, this is my opinion only so you can do what you want or maybe someone else has suggestions.
Around the floors, I would stick with just plain stock like 8 inch MDF board as the baseboard. If you want a bit more detail, you could add small 1/4 round to it but just a board by itself works fine too. Then I would stick with the original type of trim at the ceiling. I would then paint the ceiling and the ceiling trim all one colour (probably off white - don't do stark white). Personally, I would paint the panelling too - a different colour than the ceiling though and paint the baseboard as well.
