I am in search of a really yummy banana loaf or muffin recipe. I have a bunch of over ripe banana's and the last time I made a loaf it wasn't great it was ok but I am sure someone has a better recipe. With or without nuts I don't care just moist and yummy is all I want.

That is what I had done and I had a nice collection of black frozen banana's I jsut put them in the microwave for a minute to thaw and whippped up the recipe and so yummy. thanks for the recipe.
Hi Zella and Jeep, glad you enjoyed the banana bread. I always have to get to the overripe bananas before my husband or he will just throw them out. I stick them in the freezer and when I get around to it just whip up this recipe.
I made the Best of Bridge Banana Loaf this week and I have to say I think it is the best I had ever made. It gets better the next day and keeps in the fridge really well and the recipe makes 2 which is good as 1 was gone way to quick.
I loved the banana loaf from The best of Bridge, It freezes very well, so Imake 2 or 4 at a time, then I have one handy it someone comes i for coffee.

i think these are by far the best banana muffins i have EVER made - they come from barefoot contessa:
BANANA CRUNCH MUFFINS
3 cups all-purpose flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 lb unsalted butter, melted and cooled
2 extra large eggs
3/4 cup whole milk
2 teaspoons pure vanilla extract
1 cup mashed ripe bananas (2 bananas)
1 cup medium-diced ripe bananas (1 banana)
1 cup small pieces walnuts
1 cup granola cereal
1 cup sweetened flaked coconut
dried banana chips or granola cereal or shredded coconut (optional)
Preheat oven to 350F.
Line 18 large muffin cups with paper liners.
Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with the paddle attachment.
Add the melted butter and blend.
Combine the eggs, milk, vanilla, and mashed bananas, and add then to the flour-and-butter mixture.
Scrape the bowl and blend well.
Don't overmix.
Fold the diced bananas, walnuts, granola, and coconut into the batter.
Spoon the batter into the paper liners, filling each one to the top.
Top each muffin with dried banana chips, granola, or coconut, if desired.
Bake for 25 to 30 minutes, or until the tops are brown and a toothpick comes out clean.
Cool slightly, remove from the pan, and serve.
you must try it...YUM!!!!
Thank you so much for the recipes i wanted one that others had tried and knew it was good so I am going to give them a try and see which we like the best.
An old Italian family recipe:
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup softened butter
2 eggs
1 cup mashed bananas
1 tsp baking soda
2 tblsp milk
1 1/2 cup whole wheat flour
1 tsp. baking soda
Mix all together in bowl, Bake in greased loaf pan at 350 for about 20-30 min,
or until knife comes out dry.
Hi Jeep, have you ever used the recipe out of the Best of the Best, from The Best of Bridge series. It is a very good banana bread recipe.
1 cup butter
2 cups sugar
3 cups mashed ripe bananas (6 bananas)
4 eggs, well beaten
2 1/2 cups flour
2 tsp. baking soda
1 tsp. salt
1 tsp. nutmeg
Preheat oven to 350 degrees F.. Cream butter and sugar until light and fluffy. Add bananas and eggs and beat until well mixed. Mix dry ingredients and blend with banana mixture, but do not overmix. Pour into 2 lightly greased loaf pans or a bundt pan. Bake 55 minutes to 1 hour, test for doneness and cool on rack for 10 minutes before removing from pans.
This is a recipe that I use and enjoy.
I froze them last night and will research for a great recipe. I can't rmember where I got the last one from so I will check my Unifarm book.
If you can't find a great recipe right away, freeze the bananas. Check out the Alberta farm women's cookbook. This should be a staple in there. I think I used to make Banana Oatmeal cookies.
