Feta Walnut Phyllo Rolls Recipe

Recipe:

Step 1: Preheat oven to 350°F.

Step 2: Blend feta cheese, chopped walnuts, chili flakes and a pinch of salt in a food processor until a ball begins to form. Form into 25 1″ balls, then roll balls into 2-1/2″ logs.

Step 3: Cut stacked phyllo sheets lengthwise into thirds, then stack thirds into a single pile.

Step 4: Remove one sheet of phyllo and place on a work surface with the shortest end nearest you. Cover remaining pile of phyllo sheets with plastic then wrap in dampened kitchen towel and set aside.

Step 5: Brush phyllo sheet with melted butter. Place a feta log in centre of phyllo sheet parallel to shorter end. Fold phyllo in half, enclosing the log, and brush with butter. Starting at end with the log, roll up pastry to resemble a cigar. Transfer, seam side down, to a lightly greased baking sheet.

Step 6: Repeat steps to create 24 more rolls.

Step 7: Once all rolls have been placed on baking sheets, brush with melted butter and bake on centre rack until golden, 20-25 minutes. Place baking sheet on wire rack to cool. Serve warm or at room temperature.

1/4 cup walnuts, toasted and finely chopped
1/2 tsp dried chili pepper flakes
9 12″ x 17″ phyllo sheets
3/4 cups (1-1/2 sticks) unsalted butter, melted
