Brie & Oyster Mushroom Canapés Recipe

Recipe:

Step 1: Over medium heat, melt butter in a saucepan. Cook oyster mushrooms and chives for about 2 minutes, stirring occasionally. Add salt and pepper, cayenne and wine.

Step 2: Once the wine is reduced, lower heat, add pieces of Brie, and stir until cheese is almost melted. Spread should not be perfectly smooth. Remove from heat and set aside.

Step 3: Preheat oven broiler. Remove crust from bread slices and cut in four. Cover all canapés with cheese spread and place them on a cookie sheet. Sprinkle with paprika.

Step 4: Place under broiler for 5 minutes. Serve immediately.

Makes 48 canapes

Ingredients

1 tbsp butter
3 cups oyster mushrooms, roughly chopped
1/4 cup chopped chives
Salt and pepper to taste
1/4 tsp cayenne pepper
2 tbsp dry white wine
8 oz. Canadian Brie*, cut in small pieces
12 slices toasted whole wheat bread or crostini
Paprika

* Change the flavour of this dish by using Camembert.
