Ricotta-Filled Dates Recipe

Delicious appetizers wrapped in prosciutto from Top Chef star Fabio Viviani.


25 dried dates, as large as possible
1 lb. ricotta cheese
25 slices prosciutto, cut in half length-wise
Extra-virgin olive oil


Step 1: Preheat the oven to 450°F.

Step 2: Cut the dates in half and use a teaspoon to place a dollop of ricotta in each half.

Step 3: Wrap each half-date in a half-slice of prosciutto and place them in a baking pan. Drizzle with extra-virgin olive oil and dust with pepper.

Step 4: Bake for 10 minutes. Serve warm.
