Roasted Potatoes Recipe

An ideal side with eggs, sandwiches or roasts.

1/3 cup extra virgin olive oil
1 tbsp minced garlic
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp dried parsley
1/2 tsp dried thyme
1/2 tsp red pepper flakes
1/2 tsp salt
4 large potatoes, peeled and cubed
1 small onion, diced
Freshly ground black pepper


Step 1: Preheat oven to 450°F.

Step 2: In a large bowl, combine oil, garlic, basil, oregano, parsley, thyme, red pepper flakes and salt. Stir in potatoes and onion until evenly coated. Season with black pepper and mix to combine. Place potatoes and onion mixture in a single layer on a roasting pan or rimmed baking sheet.

Step 3: Roast for 20-30 minutes, turning every 10 minutes or so to brown on all sides. Serve warm.
