Warm Plums With Honey & Greek Yogurt Recipe

Recipe:

Step 1: Preheat the oven to 425°F.

Step 2: In a baking dish, stir together the honey, sugar and vanilla. Add the plums and toss well with the honey mixture. Dot the plums evenly with the butter. Roast until just warm, 5-7 minutes.

Step 3: Spoon a small amount of plums and a spoonful of juices from the baking dish into each of 4 serving glasses, then add 1/2 cup (4 oz.) yogurt to each. Top with the remaining plums. Sprinkle with the pistachios and serve right away.

1 tbsp light brown sugar
1 tsp pure vanilla extract
6 firm but ripe plums, halved, pitted, and cut into 1″ wedges
1 tbsp unsalted butter, cut into pieces
2 cups (16 oz.) plain Greek-style yogurt
1/4 cup (1 oz.) pistachios, toasted and coarsely chopped
