Green Bean & Chickpea Salad Recipe

This salad is rich in protein and vitamin B6, which helps boost your immune system and maintain blood sugar levels.

4 servings

1 lb. fresh green beans, trimmed and cut into 2" lengths
1 (16 oz.) can chickpeas, drained and rinsed
1/4 cup red onion, chopped

2 tbsp red wine vinegar
1 tbsp fresh basil, chopped or 1 tsp dried basil
1/4 tsp salt or to taste
1/4 tsp freshly ground black pepper
1 large clove garlic, crushed
1-1/2 tbsp olive oil



Step 1: Steam green beans until tender-crisp, about 4-5 minutes.

Step 2: Place beans, chickpeas and chopped onion in a large bowl. In a small bowl, whisk together all the dressing ingredients. Add dressing to the bean mixture and toss to coat. Chill beans for 1 hour or longer before serving.
