John Bishop’s Fresh Recipes

Vancouver chef, restaurateur and cookbook author John Bishop is celebrating his 25th anniversary this year as one of Canada’s first slow food chefs. Bishop’s, his Kitsilano restaurant, specializes in local fare — B.C. wines, catch-of-the-day fish and fresh farm produce. Try one of these easy recipes from his collaborative book Fresh: Seasonal Recipes Made With Local Foods (2007 Douglas & McIntyre). Serve a chilled summer soup at the cottage or a roasted lamb shoulder for Thanksgiving.
