A book about the encounter of a Quebecois chef and a rare and natural sugar, Sugar Shack Au Pied De Cochon (2012) is Martin Picard’s first cookbook. Owner of Montreal restaurant Au Pied de Cochon, Picard has gained international praise for his Canadiana dishes that mix genres and styles. The book describes an entire year in the restaurant, in sync with the rhythms of the seasons, from the sugaring-off stage to the production of maple syrup, and more than 100 recipes that use the sweet ingredient.
