Spicy Cauliflower Curry Recipe

Recipe:

Step 1: In a large pot, heat olive oil over medium heat. Add the onion, cumin seeds, garlic powder and ginger powder. Cook for 3 minutes or until onion is golden brown.

Step 2: Add stewed tomatoes, turmeric powder and chili powder and cook for about 5 minutes. Add the cauliflower and potatoes and cook for another 7-8 minutes. Add 1-2 cups of water depending on desired consistency, lower heat and simmer for 6-10 minutes, stirring occasionally. Serve over rice or as a side dish.

Ingredients

5-6 tbsp olive oil
1 large onion, chopped
1 small can stewed tomatoes
1 small cauliflower, cut into pieces
2 small potatoes, cubed
2 tsp cumin seeds
1 tbsp garam masala or curry powder
1 tsp garlic powder
1 tsp ginger powder
1 tsp turmeric powder
2 tsp chili powder
1-2 cups of water
Salt to taste
