Light and fluffy shortbread with sprinkles, perfect for Christmas entertaining and holiday parties.
1 lb. soft unsalted butter (no substitutions)
1 cup cornstarch
1 cup icing sugar
3 cups all-purpose flour
1 tsp vanilla extract
Step 1: Preheat oven to 350ºF.
Step 2: Sift all dry ingredients. Place butter and dry ingredients in mixer, with a paddle attachment on low speed mix to smooth paste. Increase speed to high and whip for 10 minutes.
Step 3: Pipe or drop dough by spoonfuls onto parchment lined baking sheet, immediately top with festive sprinkles. Bake for 10 minutes or until very light golden in colour.
Step 4: Cool on wire racks and serve. Can be stored airtight for several days.
