Darryl Estrine and Kelly Kochendorfer’s Harvest to Heat cookbook (2010 Taunton) is brimming with 100 recipes from North America’s best chefs, farmers and artisans. The book celebrates the collaboration between farmer and chef, and the journey from land to table. It encourages readers to think fresh first and buy food locally. Try one of these delicious dishes packed with fresh, seasonal ingredients, readily available in Canada, too. Serve up a beet salad (pictured above) with a tomato-topped galette in mid-summer when beets and tomatoes are at their peak. Or try the mango curry fish or beef grillades in fall and winter.
