Chef Lynn Crawford’s Gingerbread Pancakes

Try this quick and easy pancake recipe, perfect for Christmas morning or Boxing Day brunch. Celebrity chef Lynn Crawford partnered with Egg Farmers of Canada and Food Banks Canada for their annual #RecipesThatGive campaign.
Yield: Makes 8 to 10 pancakes
- Preheat a griddle or nonstick skillet to medium heat and grease.
- In a large bowl, whisk eggs, milk, molasses and melted butter. Fold in dry ingredients until just combined.
- Pour batter by 1/4 cup of batter onto hot griddle or skillet. Turn when bubbles on top begin to pop; cook until the second side is golden brown.
- Heat maple syrup in a small saucepan over medium heat for about 5 minutes. Serve with warm pancakes.
