Easy Cream Cheese Pastry Recipe

This rich pastry is easy to make and can be prepared 24 hours in advance for those busy holiday parties when you want to do as much as possible ahead of time. Use any fruit filling with this pastry recipe, just bake according to fruit filling recipe directions. Watch our food editor demonstrate this recipe on our Online TV show.

2 cups all-purpose flour
2 tbsp sugar
1/4 tsp salt
6 oz. cold cream cheese, cubed
6 oz. cold unsalted butter, cubed


Step 1: Combine flour, sugar and salt in a food processor and buzz until combined.

Step 2: Add cream cheese and butter and pulse until mixture forms very large clumps.

Step 3: Remove and shape pastry mixture into 2 flat discs. Wrap in plastic and chill in fridge for 30 minutes.*

Step 4: Place a large sheet of parchment paper on counter and dust lightly with flour. For a 9″ pie plate, unwrap one disc of chilled pastry and place on parchment paper. Roll pastry into a 12″ circle. Roll the second disc of pastry into an 11″ circle for the lid.

*For a large free-form galette, shape the pastry into one large disc before chilling, then roll out to a 16” circle.
