Mediterranean Sausage & Linguine Recipe

Recipe:

Step 1: In a large, heavy nonstick skillet, over medium heat, cook sausage, breaking sausage into small pieces with a wooden spoon. Cook until no longer pink.

Step 2: Add garlic and shallot, sauté for 1 minute. Stir in tomatoes with juices, tomato sauce, herbs, crushed red pepper, salt and pepper. Simmer about 5 minutes.

Step 3: Meanwhile, cook linguini according to al dente package directions. Drain pasta and divide evenly among 4 pasta bowls. Top with sausage mixture. Garnish with fresh basil leaves. Serve hot.

Ingredients

1 lb. mild Italian lean turkey sausage, casings removed if necessary
1 tsp minced fresh garlic
1 tbsp minced fresh shallot
1 (14-1/2 oz.) can diced tomatoes, unsalted
1 (8 oz.) can tomato sauce, unsalted
1 tbsp dried basil or 3 tbsp fresh basil
1/16 tsp crushed red pepper
1/8 tsp salt
1/4 tsp freshly ground black pepper
12 oz. dry whole grain linguine
Fresh basil leaves for garnish
