Spiced Devils On Horseback

Recipe: Eric Vellend

These sweet, crunchy morsels can be made ahead and reheated in the oven.

  •  48 raw almonds
  • 1⁄2 tsp olive oil
  • 1⁄2 tsp garam masala
  • Fine sea salt to taste
  • 24 Medjool dates
  • 12 slices bacon, cut in half crosswise

Yield: Makes 24

  1. Preheat oven to 350°F. Place almonds in small ovenproof frying pan. Bake for 6 minutes. Stir in oil, garam masala and salt. Bake 1 minute. Remove and cool.
  2. To each date, make a lengthwise incision and remove pit. Stuff each date with 2 almonds. Reform dates and wrap with bacon. Place on parchment-lined baking tray, seam side down. Cover and refrigerate until ready to use.
  3. Preheat oven to 400°F. Bake until bacon is crisp, 20 to 25 minutes. Cool 10 minutes and drain briefly on paper towel before serving.
