Here is another simple sponge cake recipe.

How to prepare.
Prep: 5 mins | Cook: 20 mins
1. Preheat the oven to 190 C / Gas 5. Grease a 20 or 23cm round cake tin.2. In a medium bowl, whip together the eggs and caster sugar until fluffy. Fold in flour. Pour into the prepared tin.3. Bake for 20 minutes in the preheated oven, or until the top of the cake springs back when lightly pressed. Cool in the tin over a wire rack. Enjoy!
Since by now you must have got the recipe for sponge cake and pound cake , I thought of
sharing few tips while making these cakes.
1. Add cocoa powder if you want to have a chocolate sponge cake.
2. A fail-safe method for cleaning your mixing bowl well before whisking the egg whites is to cut a lemon in half and rub the bowl with the fleshy side of the fresh lemon as the citric acid ensures a fat-free whisking bowl.
3. Have all your ingredients at room temperature; cold ingredients do not blend evenly.
4. Since butter is one of the primary flavors in this cake, use good sweet butter with high butterfat content. I also prefer cultured butter , which impart a wonderful complexity of flavor.
5. Beat the butter very well in a stand mixer- at least five minutes - and add the sugar slowly. Then beat some more. Keep scraping the bowl down.
6. Add the eggs one at a time. Incorporate as much air as possible to make the cake really puff. I like to beat each egg for a full two minutes before adding the next one.
7. Use cake flour. It will make your cake more tender.
8. When it’s time to add the flour, remove the bowl from the mixer and do it by hand, gently folding the flour in. Stop as soon as the flour is incorporated into the butter and egg mixture; keeping as light a hand as possible here will make keep the cake wonderfully delicate.
9. If you want a beautiful crack down the middle, melt a little butter. When the cake has been in the oven for 10 minutes and the top is just starting to form a crust, dip a sharp knife into the butter and quickly draw it lengthwise down the middle of the cake. It will form a perfectly picturesque crack.
10. Serving Suggestions: Although sponge cake can be eaten as it is, it can be used as the base for many different layered cakes.
11.Make two or more cakes for a layered sponge. Double or triple the recipe ingredients if you are adept at mixing quickly; otherwise, make the additional cakes separately so that each cake remains light and fluffy.

Recipe for Banana Loaf - not sponge or pound cake however.
Ingredients:
125g butter
150g caster sugar
1 tsp vanilla extract
1 egg, beaten
2 very ripe bananas, mashed
190g self raising flour
60ml milk
Preparation:
1.Grease and line a 2lb loaf tin. Melt butter, sugar and vanilla in a saucepan over a medium heat.
2. Remove from heat and add the mashed bananas, mix well.
3. Add the egg, mix well.
4. Stir in the flour and the milk.
5. Pour into the prepared tin, sprinkle with a tablespoon of demerara sugar to give a crunch topping if liked.
6. Bake at 150 C fan oven (or 170 C regular, Gas mark 3) for 35 mins, until a skewer comes out clean.

First of all sift flour once, then measure. And then add baking powder and salt to the flour and sift together 3 times. In a mixing bowl beat eggs for about 5 minutes, until very thick and light yellow in color. Add sugar gradually, beating constantly. Add lemon juice. Fold in flour mixture a little at a time. Add milk, mixing quickly and blending thoroughly. Pour into an ungreased 9-inch tube cake pan. Bake at 350° for about 35 minutes, or until top springs back when touched lightly with finger. Remove from oven and invert pan for 1 hour, or until completely cooled. Enjoy the sponge cake!
