Apple Slaw Recipe

Try this Mexican-inspired slaw for lunch or as a sweet side dish.

2 Granny Smith apples
1 chipotle pepper, diced
1 tsp chipotle sauce
Juice of 2 limes
1/4 cup fresh cilantro, chopped
1/4 cup Spanish onion, julienned
1 tsp white sugar
Salt and freshly ground pepper to taste


Step 1: Peel, core and slice apples into thin matchsticks.

Step 2: In a small bowl, combine chipotle, sugar and lime juice. Add the Spanish onion, apple and cilantro. Cover and refrigerate for 1 hour before serving.

Makes 4 to 6 servings
