French Canadian Christmas Cake Recipe

H&H staffer Nancy Paquette shares this recipe for Quebecois holiday fruit and pork cake from her grandmother.

2 eggs
1 cup sugar
1 cup molasses
1/2 cup 2% milk
1/2 cup butter
1 tsp baking soda
1 tsp ground cloves
1 tsp nutmeg
1 tsp cinnamon
1 cup salted pork (soak pork in cold water for 30 seconds to a minute to remove some salt, then grind the pork)
2 cups sultana raisins
1 cup chopped nuts
3 cups flour
2 tsp baking powder


Step 1: Preheat oven to 350°F.

Step 2: Mix together eggs, sugar and molasses.

Step 3: Add milk, butter and baking soda.

Step 4: Add cloves, nutmeg, cinnamon, pork, raisins, nuts, flour and baking powder. Mix everything together, pour into a Bundt pan and bake for about 1-1/2 hours.
