Hopscotch’s Kimchi Kick Bowl
Try this healthy Kimchi Kick Bowl recipe from Toronto restaurant Hopscotch.

Yield:
Sesame Ginger Dressing
- Puree garlic and ginger in a blender.
- With blender running add oils, soy sauce, rice wine vinegar and honey.
- Transfer to a jar to store and add sesame seeds.
Gochujang Mayo
- Mix mayo with Gochujang until blended.
Kimchi Kick Bowl
- Add brown rice to bowl.
- Add bean sprouts, cabbage, carrots, cucumber, edamame, scallions, radish and chicken or pork to bowl.
- Toss with sesame ginger dressing.
- Top with cilantro and nori to taste.
- Slowly drizzle Gochujang Mayo overtop.
