Try this healthy Kimchi Kick Bowl recipe from Toronto restaurant Hopscotch.

Ingredients
  • 2 cups cooked brown rice
  • ¼ cup bean sprouts
  • ¼ cup shredded cabbage
  • ¼ cup shredded carrots
  • ¼ cup diced cucumber
  • 2 tbsp shelled edamame peas
  • 1 tbsp finely chopped scallion
  • 1 tbsp julienned radish
  • 3.5 oz of roasted chicken or pork
  • Sesame ginger dressing (recipe below)
  • A few cilantro sprigs
  • 1 Nori sheet, finely sliced
  • Gochujang mayo (recipe below)

Sesame Ginger Dressing

  • 5 cloves of garlic, peeled
  • 2 tbsp finely chopped ginger
  • ¾ cup canola oil
  • 3 tbsp sesame oil
  • 1/3 cup sweet soya sauce
  • ½ cup rice wine vinegar
  • 3 tbsp honey
  • 1 tbsp white sesame seeds, lightly toasted

Gochujang Mayo

  • 1/3 cup mayo
  • 2 tbsp Gochujang

Sesame Ginger Dressing

  1. Puree garlic and ginger in a blender.
  2. With blender running add oils, soy sauce, rice wine vinegar and honey.
  3. Transfer to a jar to store and add sesame seeds.

Gochujang Mayo

  1. Mix mayo with Gochujang until blended.

Kimchi Kick Bowl

  1. Add brown rice to bowl.
  2. Add bean sprouts, cabbage, carrots, cucumber, edamame, scallions, radish and chicken or pork to bowl.
  3. Toss with sesame ginger dressing.
  4. Top with cilantro and nori to taste.
  5. Slowly drizzle Gochujang Mayo overtop.
