Joe Beef’s Steak Tartare Recipe

Step 1: Put food processor blade in freezer to cool.
Step 2: With a sharp knife, chop beef into large cubes and place in freezer for 10 minutes.
Step 3: Attach cold blade to food processor. Place chilled meat in food processor and pulse until minced, about 15 pulses. Transfer to a bowl and stir in capers, gherkins, parsley, Worcestershire sauce, hot sauce, ketchup, egg yolk, anchovy and oil. Season to taste with salt, pepper and additional hot sauce, if desired.
Step 4: Place meat mixture on cutting board and use a round metal cookie cutter to shape steak tartare into 4 portions. Drizzle with additional oil and pepper. Serve with toast or French fries.
