Lamingtons Recipe

Cubes of pound cake coated in chocolate and coconut. These delicious desserts can be prepared ahead of time — perfect for a holiday potluck.

1 pound cake loaf
1/2 cup raspberry jam in a piping bag
1/4 cup cocoa powder
1/3 cup icing sugar
1/3 cup water
1 tsp vanilla
1 cup shredded sweetened coconut


Step 1: Cut the pound cake into 12 cubed portions.

Step 2: With the piping bag with jam, press the tip into each piece and squeeze a little jam into the middle.

Step 3: In a bowl, mix the cocoa, icing sugar, water and vanilla.

Step 4: Dip each jam-filled cake section into the cocoa mixture, coating each side.

Step 5: Roll in the coconut to coat the outside. Repeat until all the pieces are done. Cover until ready to enjoy or eat right away.
