Le Dolci’s Vanilla Cake Recipe

Recipe: Le Dolci

Get Toronto bakery Le Dolci‘s recipe for classic vanilla cake with vanilla buttercream used for our Carrera Marble-Inspired Cake.



  • 3 tbsp butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 cup flour
  • 1 tsp baking powder
  • A pinch of salt
  • 1/2 cup milk
  • 1 tsp vanilla extract


  • 1 cup sugar
  • 4 egg whites
  • 1lb (1 block) unsalted butter, at room temperature
  • A pinch of salt
  • 2 tbsp vanilla extract
  • Any additional flavoring to taste (ex. strawberry puree, Oreo crumbs, cream cheese etc.)


Yield: 1 – 6” round cake

  1. To make the cake, beat the butter and sugar. Cream until color turns pale.
  2. Gradually add eggs one at a time. Scrape the bowl and make sure everything is combined.
  3. Combine the dry ingredients.
  4. Combine the wet ingredients.
  5. Add alternating dry and wet ingredients in to the batter.
  6. Bake for 25 – 30 minutes at 325°F.
  7. To make the buttercream, cook sugar and egg white over a double boiler until 160ºF. Beat the meringue into hard peaks with whisk and let it cool down. Add in salt.
  8. Add chunks of soft butter and vanilla extract with a paddle until smooth. Add in your additional flavorings.
