Lemon Ginger Squares Recipe

Recipe:

Step 1: Preheat oven to 350°F.

Step 2: To make the crust: In a food processor, blend ingredients until they resemble coarse meal. Press mixture into the bottom of a lightly greased 13″ x 9″ baking pan. Bake about 20 minutes or until golden. Let the crust cool completely in the pan on a rack.

Step 3: To make the filling: In a large bowl, beat eggs, sugar and lemon juice together. Add flour and baking powder and stir to blend. Pour filling into baked crust and bake for 25 minutes or until the filling is set and pale golden. Remove from oven and place on rack to cool. Cut into squares.

Ingredients

Crust
2 cups all-purpose flour
1/2 cup confectioners sugar
1 cup (2 sticks) chilled unsalted butter, cut into cubes
1/4 cup chopped and toasted hazelnuts

Filling
4 eggs
2 cups granulated sugar
1/3 cup fresh lemon juice
1/4 cup all-purpose flour
1/2 tsp baking powder
1 tsp ground ginger
Confectioners sugar for dusting (optional)
