Moroccan Quinoa Recipe

Recipe:

Step 1: Rinse quinoa until water runs clear. Add one part quinoa and 1-1/2 to 2 parts salted water to pot, bring to boil, reduce heat and simmer 12 to 14 minutes, until water is absorbed. Let stand 5 minutes.

Step 2: Stir in carrot, lemon, raisins, cumin, cinnamon, green onion and drizzle of olive oil.

Ingredients

Quinoa
Finely grated carrot
Chopped preserved lemon
A few sultana raisins
Pinch of cumin and cinnamon
Sliced green onions
Olive oil
