Peach Guacamole

Try this Peach Guacamole from the new cookbook, Occasionally Eggs.

Stone fruits are delicious in savory dishes, but this is often overlooked in favor of using them in pies and other sweets. Peaches add a sweet element to this guacamole, making it even better for topping a taco or serving with chips in the summer. The lime keeps the avocado fresh for a while, so you can make this a couple of hours ahead of time without worrying about ugly guacamole.

Ingredients

  • 2 ripe peaches, pitted and diced
  • 2 ripe avocados, peeled, pitted, and diced
  • 1⁄2 small red onion, finely chopped (about 3 tbsp)
  • 1 small jalapeño pepper, minced
  • 2 tbsp finely chopped cilantro
  • Juice of 1 lime
  • 1⁄2 tsp salt

Directions

Yield: Serves 4 as a side

  1. Add all of the ingredients to a bowl and mix well. Add more lime juice or salt to taste and serve immediately. If you want to make this a couple of hours in advance, keep it in a sealed container at room temperature. Any longer than 2 to 3 hours and the peaches will start to break down.
