Thai Marinated Salmon Recipe

A spicy Thai marinade gives wild salmon a delicious flavour.

1 side wild salmon
5 tbsp fresh ginger
1/2 tbsp Szechwan peppers
3 tbsp lemon grass
2 tsp star anise
1/2 bunch coriander
4-1/2 tbsp fresh lime juice
1 tsp kosher salt
1 tbsp sugar


Step 1: Purée the ginger, peppers, lemon grass, star anise, coriander and lime juice in a food processor until smooth. Add the salt and sugar.

Step 2: Spread evenly over the salmon. Cover and let sit for 24 hours. Wipe off excess mixture and slice very thinly to serve as an appetizer, or grill on the barbecue for perfectly marinated fillets.
