There have been lots of chicken recipes posted that look like they would be great to try.
here is a slow cooker one that is very delicious and quite budget friendly, too!
8 - 12 chicken thighs or small drumsticks (about 2-3 pounds) - can be frozen too!
3/4 cup hot or medium salsa
1/4 cup peanut butter (chrunchy is very good)
2 tablespoon lime juice
1 tablespoon soy sauce
1 teaspoon chopped fresh ginger
Place chicken in slow cooker, mix remaining ingredients and pour over chicken parts.
Cover and cook on low setting 6 -8 hours.
If desired, sprinkle with 1/4 cup chopped peanuts when ready to serve and/or 2 tablespoon chopped cilantro.
Enjoy!
Serve with rice, green veggies and salad.

Here's a slow cooker for you
Mexi Beef
Ingredients:
3 pound Roast
1 pkg taco seasoning
Shredded Cheddar/Jack Cheese
Chopped lettuce, cucumer, tomatoes
Sour Cream
Salsa
Instructions:
Take a roast of beef...cross rib, london broil, flank steak - 3 pounds Place meat in slow cooker. Sprinkle 1 pkg of taco seasoning on top. Cook on low all day.. About 1 hour before dinner take meat out of cooker and shred fine with two forks. Mix juices back in with meat and place back in slow cooker to keep warm. Serve meat wrapped up in flour/corn tortillas with shredded cheddar/jack cheese, chopped lettuce, cucumber, tomatoes, sour cream/yogurt, and salsa.
